Makes ~3 dozen cookies
Ingredients
1/2 cup (1 stick) butter or margarine
1/2 cup granulated sugar
1/2 cup brown sugar, light or dark
1 egg
1 teaspoon vanilla
1 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/4 cups Flour
1 1/2 cups rolled oats
1/2 cup dried cranberries
1 1/2 cups dried apple nuggets or chopped dried apples

Directions
- Preheat oven to 350 F.
- In a large mixing bowl, cream together the butter or margarine and the sugars.
- Add the egg and vanilla, and beat till smooth.
- Stir in the remaining ingredients, mixing till everything is well-combined.
- Drop the dough by heaping tablespoonfuls (a cookie scoop works well here) onto lightly greased or parchment-lined baking sheets, leaving about 1 1/2 inches between each ball of dough.
- Bake for 12 to 15 minutes, or until they're golden brown.
- Remove them from the oven, and cool on a wire rack.
- Store them airtight; if you want to keep them very soft and chewy, store them with our brown sugar/cookie softener.
