Cucumber Salad (Korean)

(Serves 8)

Ingredients
1 lrg Korean radish or
1 thinly sliced cucumber
2 tsp salt
2 tsp red pepper *
2 tsp Sugar
1 1/2 tbsp vinegar
2 tbl minced scallion
1 tsp minced garlic

Directions
  1. Peel radish and cut into match stick pieces about 2" long.
  2. Sprinkle with salt and let stand for 10 minutes. Rinse to remove excess salt and drain well. Wrap radish in several thicknesses of cheesecloth and squeeze out as much liquid as possible. In bowl, combine radish with red pepper, sugar, vinegar, scallion, and garlic, mixing well.
  3. Serve at once or refrigerate to blend flavors.
