2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 1/2 cups sugar
1/2 cup shredded coconut
1/2 cup chopped walnuts
1/2 cup raisins
2 cups chopped mangoes
3/4 cup salad oil
3 eggs beaten
2 teaspoons vanilla
Directions

Directions
- Preheat oven to 350 F.
- Grease a 9x5x3 inch loaf pans or 2 - 7.5x3.5x2 inch loaf pans.
- Sift flour with baking soda and cinnamon into mixing bowl.
- Stir in sugar, coconut, walnuts and raisins.
- Add mangoes, salad oil, eggs, and vanilla and mix well.
- Pour into prepared pans and bake for 1 hour and 15 minutes or until toothpick or knife inserted into middle of loaf comes out clean.
