Mango Bread

Ingredients2 cups all purpose flour
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 1/2 cups sugar
1/2 cup shredded coconut
1/2 cup chopped walnuts
1/2 cup raisins
2 cups chopped mangoes
3/4 cup salad oil
3 eggs beaten
2 teaspoons vanilla

Directions

  1. Preheat oven to 350 F.
  2. Grease a 9x5x3 inch loaf pans or 2 - 7.5x3.5x2 inch loaf pans.
  3. Sift flour with baking soda and cinnamon into mixing bowl.
  4. Stir in sugar, coconut, walnuts and raisins.
  5. Add mangoes, salad oil, eggs, and vanilla and mix well.
  6. Pour into prepared pans and bake for 1 hour and 15 minutes or until toothpick or knife inserted into middle of loaf comes out clean.
