Ingredients
3 packets (1/4 ounce, 2 3/4 tsp each) unflavored gelatin
1 cup cool water, divided
1 1/2 cup sugar
1 cup light corn syrup
1/4 tsp kosher salt (or 1/8 tsp table salt)
1 tbsp vanilla

Directions
- Combine the gelatin and 1/2 cup cool water in the bolw of an electric mixer fitted with the whisk attachment.
- Combine the sugar, corn syrup, salt, and the remaining 1/2 cup water in a small saucepan with high sides.
- Cook over medium heat, stirring, until the sugar dissolves.
- Raise the heat to high and cook, without stirring, until syrup registers 240 F on a candy or insta-read thermometer.
- Remove from heat.
- With mixer on low, slowly pour sugar syrup into the dissolved gelatin.
- Increase mixer speed to high and whip until the mixture is very thick and has cooled to room temperature, about 8 to 10 minutes.
- Add vanilla toward the end of the mixing time.
