Marshmallows

Ingredients
3 packets (1/4 ounce, 2 3/4 tsp each) unflavored gelatin
1 cup cool water, divided
1 1/2 cup sugar
1 cup light corn syrup
1/4 tsp kosher salt (or 1/8 tsp table salt)
1 tbsp vanilla

Directions

  1. Combine the gelatin and 1/2 cup cool water in the bolw of an electric mixer fitted with the whisk attachment.
  2. Combine the sugar, corn syrup, salt, and the remaining 1/2 cup water in a small saucepan with high sides.
  3. Cook over medium heat, stirring, until the sugar dissolves.
  4. Raise the heat to high and cook, without stirring, until syrup registers 240 F on a candy or insta-read thermometer.
  5. Remove from heat.
  6. With mixer on low, slowly pour sugar syrup into the dissolved gelatin.
  7. Increase mixer speed to high and whip until the mixture is very thick and has cooled to room temperature, about 8 to 10 minutes.
  8. Add vanilla toward the end of the mixing time.
