Pork Chow Fun

Pork Chops8 oz. pork chop with bones

To make the chops
  1. Marinate for minimum 2 hours
  2. Pan fry marinated pork chops with clarified butter and olive oil. (about 4 minutes on each side).
Shoyu Marinade
1 c. Aloha shoyu
1 Tbs. garlic
1 Tbs. ginger, crushed
1/2 orange
1 lime
1/4 c. sugar
1 each Hawaiian chili pepper

To make the marinade
  1. Toss all ingredients together and let sit overnight in the refrigerator.
Garlic Butter
4 oz. butter (room temperature)
10 garlic cloves boiled with milk for 15 minutes, rinse cooked garlic cloves under running cold water.

To make the garlic butter
  1. Puree garlic cloves, then mix with butter, add salt and ground white pepper as needed.

To make the noodles
  1. Lay flat chow fun noodle on a parchment paper sheet, apply a thin layer of garlic butter, rolled and keep chilled.
  2. Steam rolled garlic chow fun noodle. Remove pork chop from pan, remove fat and deglaze with water or chicken stock to make a short jus. Arrange nicely on a serving plate or platter, drizzle jus on pork chop and garlic chow fun noodles.
