Goat Cheese Mashed Potatoes

3 lbs russet potatoes, peeled, cut into 1.5" pieces
1 cup whole milk
1 onion, chopped
6 tbsp (3/4 stick) butter
4 ounces soft fresh goat cheese, crumbled



Cook potatoes in a large pot of boiling salted water until tender, about 30 minutes.

Bring milk, onion, and butter to boil in small saucepan over medium-high heat. Remove from heat.

Drain potatoes and return to pot.

Add goat cheese and mash until blended.

Season to taste with salt and pepper.
