2 lb boneless pork butt
1/2 cup ketchup
1/2 cup apple cider vinegar
1/2 cup pineapple juice
1/3 cup brown sugar
2 tbsp shoyu
1 tbsp hoisin sauce
1 heaping tsp black pepper
2 tsp garlic, minced

1 can diced pineapple
1 large onion, chopped
1 large carrot, sliced to thin coins

corn starch slurry

mix all marinade ingredients together. taste. adjust. I usually add a dash more pineapple juice and a dash more vinegar.
chop pork into bite-size pieces. heat some oil in a stew pot over med-high heat. add pork, season, and sear. add onions/carrots, season and cook (about 5 more min).
once pork and onions are cooked, add pineapple and marinade. bring to a boil.
whisk in cornstarch slurry to thicken the marinade. serve over rice.
