- 1 can coconut milk
- 1 tsp coconut extract
- 2 cups water
- 1 3/4 (scant) cup sugar
- 2/3 c half & half
- 5 oz crushed pineapple, drained
- 1 cup water
- 155 g corn starch
Mix the cornstarch with 1 cup water. Combine pineapple, sugar, 2 cup water, extract, half & half and coconut milk. Bring the mixture to a boil and then whisk in the cornstarch slurry. Keep stirring until smooth and thickened. Use the large batter scoop to fill 26 2x2 molds, smooth the tops with a rubber spatula, cover with saran wrap and let set overnight.

- 160 g corn starch
- 6 oz crushed pineapple, drained
Mix the cornstarch with 1.5 cup water. Combine pineapple, sugar, 1.5 cup water, extract and coconut milk. Bring the mixture to a boil and then whisk in the cornstarch slurry. Keep stirring until smooth and thickened. spoon into 2x2 molds, smooth the tops with a rubber spatula, cover with saran wrap and let set overnight
