Poi Mochi


makes 13x9 pan

1 cup butter, melted and cooled
1 cup brown sugar, packed
3/4 cup white sugar
1 lb poi, 2 finger (2 cup water, 115 g powder)
1 can coconut milk
4 eggs, room temp and slightly beaten
4 cup mochiko flour
1 tbsp baking powder


Preheat oven to 350F.

Thoroughly mix the sugar into the cooled butter. Then mix in the poi, eggs & coconut milk.

In another bowl, combine the mochiko and baking powder.

Slowly mix the flour into the liquids. Stir until smooth.

Grease a 13x9 pan. Cook for 1 hour.

Let cool, enjoy.
