Chai Concentrate


1 gallon water • 4 stick cinnamon • 1 large piece fresh ginger, minced • 24 whole cardamom pods • 7 whole star anise pods • 40 whole cloves • 1 tbsp freshly ground black pepper • 1 tbsp freshly ground nutmeg • 1 orange peel • 30 tea bags

2 1/2 cups brown sugar • 1/3 c honey • 1/3 c vanilla


Bring the water to a boil. Add the spices and tea, remove from heat and let steep 30 minutes. Strain and add the brown sugar, honey, and vanilla. Stir to combine. Mix 1 part concentrate with 1 part milk, heat and enjoy or pour over ice.

Shrub, Plum Ginger


4 cups plums, quartered and pitted • 6 inches ginger, sliced • 3 cups sugar • 4 cups raw apple cider vinegar

place the plums, ginger and sugar into a large container for two days. Stir often to allow it all to macerate and dissolve as much sugar as possible. strain out the plums and ginger. discard the ginger and save the plums; either for snacking or puree them up and add to yogurt or put on ice cream. add the vinegar to the flavored sugar, strain again and put into bottles.

mix as you like for drinks: I prefer 1:1.5 shrub/vodka and top with club soda

Smoothie: Cherry Berry Tea

  • 3/4 cup water • 1 Rooibos tea bag • 6 ounces silken tofu • 10 oz frozen sweet cherries • 6 oz  frozen grapes • 3 oz frozen blueberries • 1 tbsp flax seed 

  • Steep the tea for 8 min, then chill. Put it all in the blender and mix well.
  • Smoothie: Grapefruit Green



1 grapefruit • 1 apple • 2 cup spinach • 1 banana • 4 oz almond milk • 2-3 ice cubes • 1 serving protein powder

Put all in a blender, milk first, blend until smooth.
  • Smoothie: Key Lime Pie


8 oz almond milk • 1/2 tsp vanilla extract • 1 frozen banana • 1/2 cup spinach • zest from 1 lime • 1 medjool date, pitted • 1 tbsp crushed graham crackers • 1 serving protein powder

Combine all ingredients except the graham crackers into the blender. Mix well. Pour into a glass and stir in the graham crackers.
