1 cup sugar
1 jar Thai red curry paste
1 large onion, julienne
1 head garlic, chopped
1/2 cup fish sauce
1 cup fresh lime juice
1/4 cup honey 3 lbs pork tenderloin, large dice
2 cans chunk pineapple, drained
cornstarch and water
In medium-sized bowl, combine sugar through honey. Set aside.
Add pork and let marinate in refrigerator for at least 4 hours, preferably overnight.
Once marinated, preheat oven to med-broil (5). Lay out pork on 2 broilers. Cook each for 7 minutes.
As pork is cooking, put excess marinade in small sauce pan, heat. Add some cornstarch to thicken.
Also while pork is cooking, cook pineapple over high heat to sear. Drizzle with honey while cooking if desired.
Once both batches of pork are done, add to pineapple. Serve over rice, drizzle with extra sauce.
