1/3 cup warm water
1/4 tsp Hondashi (Japanese instant soup base) (optional)
6 eggs
3 tbsp sugar
1 tbsp Mirin


Mix Hondashi in the water to dissolve.


Mix with remaining ingredients and beat gently to mix.


Cook in small batches on medium heat using a little oil if desired. Try to keep it in one chunk, cook it thin until it's almost done then fold it over on itself.
