Clementine Cupcakes

Cupcakes
Zest of 2 clementines
Juice of 2 clementines
1 2/3 cups flour (After mixing, if it's too watery, 3 or 4 more tbsp flour. Clementines vary in size, so you might get more juice than you want)
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1 stick butter (8 tablespoons)
2 eggs
1/2 (+ two tablespoons) cup milk (I've used whole, 2%, and soy milk...all with good results)
1 cup sugar

To make the cupcakes
Preheat the oven to 350. Gently hand mix together flour, baking powder, zest and salt in a bowl. In a separate bowl, stir together milk and juice, mix.
Cream together the butter and sugar with an electric mixer, and add the eggs. Add part of the dry mixture, let blend, and then add the milk mixture and then the remaining dry mixture until just blended.
Fill a lined muffin tin with the batter.
Bake for 22-25 minutes, until toothpick inserted in center comes clean. Let cool.
