1/2 cup butter (1 stick), room temperature
1 cup sugar
2 eggs
1 tsp vanilla
2 scant cups flour (9 oz)
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp cloves
1/2 tsp nutmeg
2 large very ripe bananas

Preheat oven to 350F. Coat a bread pan with cooking spray.
Mash the bananas and set aside. I like to use a pasty cutter (or potato masher) so the chunks stay big.
In a large bowl, cream together the butter and sugar.
Add the eggs and vanilla, mix well.
In a smaller bowl, add all dry ingredients. Then sift the dry ingredients into the wet. Mix well.
Stir in the bananas. Dump it all in the prepared bread pan and cook for 60 - 70 minutes. Test with cake tester at 60 min.
Let cool in pan on counter for 15 minutes. Then remove from pan (may need to run a knife around the edges) and let cool completely on wire rack (or plate).
