Beef Jerkey


3 lb top round beef, trimmed off all fat
12 oz diet soda (I like diet root beer or diet dark cherry)
1/2 cup shoyu
1/4 cup rice wine vinegar
1 tbsp liquid smoke
1 tsp garlic powder
1 tsp onion powder
1 tsp red pepper flakes
3/4 tsp paprika
1/2 tsp ground ginger
1/2 tsp black pepper

Pop the top round into the freezer for about 20 min to firm it up a bit. While it's in the freezer, mix together the rest.

Thin slice the top round and place in a gallon zip loc bag. Pour the marinade on the top round and mix to thoroughly cover all the meat. Marinate for up to 24 hours.

Drain off the marinade and place single layer on the dehydrator sheets. Sprinkle with more garlic salt/pepper mixture. Leave in the dehydrator at 160f for 5-7 hours depending on the thickness of the slices.
