Jalapeno Hasselback Chicken

4 slices bacon, cooked and crumbled

2 oz cream cheese, softened

2 jalapenos, fine diced

1 tsp garlic, diced

1/2 c cheddar cheese, divided

2 boneless skinless chicken breast

Seasoning


In a medium bowl, combine the bacon, cream cheese, jalapenos, garlic and 1/4 c of the cheddar.

Cut about 6 slits in each chicken - do not cut all the way through. Season the chicken with whatever seasoning you prefer: I did kosher salt, pepper, garlic powder and red pepper flakes. Stuff the cheese mixture into the slits.

Place the chicken in the air fryer basket and cook at 350F for 15 min.  Note: I have the InstaPot Air Fryer and it's a much smaller basket. I had to cook for 16 min to start and then another 8 min. Maybe just cook one at a time to ensure doneness if you have the InstaPot Air Fryer. Ensure the internal temp is 165F.

When there's 1 minute left, sprinkle the remaining cheese on top of the chicken.
