Basil & Gin


2 oz herbaceous gin • 1/2 oz Strega • 1.5 oz basil simple syrup • 1 oz lime juice • 2 oz ginger beer or ginger ale

put all into a cocktail shaker with ice and shake for 30 seconds, strain into a glass

Bee's Knees

2 oz gin • 3/4 oz lemon juice • 1 tbsp honey syrup • egg white

put all into a cocktail shaker and dry shake for 12 seconds, add ice and shake for another 12 seconds, strain into a glass

Blood Orange Sage Sour


2 oz gin • 1/2 oz McClintock Blood Orange Saffron liqueur • 3/4 oz lime juice • 1.5 oz sage simple syrup • egg white

put all into a cocktail shaker and dry shake for 12 seconds, add ice and shake for another 12 seconds, strain into a glass

Blueberry Sour

1 cup blueberries • 2 tbsp simple syrup • 4 tbsp lemon juice • 1 egg white • 100 ml gin • 2 dashes bitters

Muddle blueberries, lemon juice and simple syrup. Add gin & bitters. Shake vigorously for 12 seconds, add the egg white & shake for another 12 seconds. Carefully open, add ice, re-shake and strain into highball.

Bronx Cocktail

2 oz gin • 1/4 oz sweet vermouth • 1/4 oz dry vermouth • 1 oz orange juice • 2 dashes orange bitters • orange slice

Put all but the bitters & orange slice in an ice-filled shaker. Shake until well chilled, pour into your favorite cocktail glass. Top with two dashes of orange bitters & decorate with an orange slice. I topped these off with an extra dollop of orange juice and some tonic just to fill the glass.

Cherry Blossom

3oz Akori gin • 1.5oz elderflower liqueur • .75oz lime juice • 6 dashes lavender bitters • 5 cherries for muddle and some more for garnish

Muddle 5 cherries with all the liquid, shake with ice and strain into a glass. Garnish with more cherries.

Clover Club

1.5 oz Dog Fish Head Gin • 0.5 oz dry vermouth • 0.75 oz raspberry syrup • 0.5 oz fresh lemon juice • egg white

Put all ingredients in a shaker (egg white last), shake vigorously without ice for 15 sec. Add ice and shake for another 15 sec. Drain into a cocktail glass, express oil from a lemon peel over the top and garnish with raspberries.

Cran Mango Orange

2 oz gin • 1 oz triple sec • 3 oz cran mango • 1.5 oz fresh squeezed orange juice • slow drizzle of about a 1/2 oz grenadine • garnish with a bruleed orange slice.

Cucumber Basil Refresher

1.5 oz gin • 3/4 oz pureed & strained cucumber • 1/2 oz simple syrup • 6 basil leaves • 1/4 oz lemon juice • 1 oz club soda

Muddle basil and gin in a shaker, add ice and all ingredients except soda, shake well, strain into glass, top with soda.

Earl Gray

3oz gray wolf spirits sassafras rested gin • 2oz earl gray simple syrup • 1oz lemon juice • 1 egg white

Shake all for 15 sec, add ice and shake for another 15, pour into a chilled coupe and garnish with some milk tea popcorn

Elderflower Rose Gin & Limoncello

2oz Empress 1908 elderflower rose gin • 0.5oz limoncello • 3oz raspberry lemonade • 0.5oz lemon juice • 1tsp raspberry syrup

Top with heavy cream frothed with a tsp of raspberry syrup

Fleur de Lis

2 slices cucumber, dice and muddled • 1.25 oz gin • 0.25 oz elderflower liqueur • 0.5 oz lime juice • 0.25 oz simple syrup • 4 oz ginger ale • lime wedge

Muddle the diced cucumber slices in the bottom of a shaker, add ice and all liquids except the ginger ale. Shake until blended and chilled, pour everything into a rocks glass, top with ginger ale. Garnish with a lime wedge.

French Blueberry Sour

1/4 c mashed blueberries • 2 oz Empress gin • 1 oz elderflower liqueur • 2 oz lime juice • 1 oz simple syrup • 3 dashes bitters

Strain the blueberries into the cocktail shaker. Add gin, elderflower, lime juice and simple syrup. Shake well with ice. Free pour into a glass and top with bitters.

Gin and Jam Sour



2 oz empress 1908 • 1 oz lemon juice • 2 tsp strawberry jam • egg white

Put everything but egg white in a shaker with ice. Shake for 30 sec then strain into a glass. Discard ice and any left over solids. Return liquid to the shaker, add the egg white and dry shake for 30 sec. Pour into a chilled coupe.

Gin and Pear Cocktail

2 oz Dog Fish Head Gin • 2 oz pear nectar • 0.5 oz Forthave Spirits Amaro • top with ginger ale

Jack Frost

2oz Empress 1908 Gin • 2oz pineapple juice • 1/2c vanilla ice cream • 1tbsp blueberry syrup

Blend all together and enjoy

Orange Blossom

25 ml gin • 25 ml sweet vermouth • 25 ml orange juice • serve over ice

Persimmon Gin Apple Cider Sour


3oz Empress 1908 Gin • 1.5oz lemon juice • 2oz spiced apple cider 2oz Persimmon puree • egg white • sparkling apple juice to top
Persimmon puree: 1 whole persimmon & 3oz water. Puree until creamy and smooth

Purple Fizz Royale

Ice • 1.5 ounces sloe gin • 1.5 ounces freshly squeezed grapefruit juice • 1 tbsp simple syrup • Chilled sparkling wine • Twist of grapefruit peel, for garnish

Fill a cocktail shaker halfway with ice. Add the sloe gin, grapefruit juice and simple syrup. Shake well, then strain into an ice-filled highball or Collins glass. Top with about 2 ounces of sparkling wine, or as needed. If desired, garnish with the twist of grapefruit peel.

Spruce Goose

1.5 oz gin • 3/4 oz lime juice • 1/2 oz honey or simple syrup • 3 dashes bitters • 2 oz tonic

Combine all but tonic in shaker over ice. Shake vigorously for 10 sec. Strain, pour and top with tonic.

Strawberry Ginger

3oz gin • 0.5oz ginger liqueur • 6oz strawberry ginger mayawell prebiotic soda

mix all together and garnish with a fresh strawberry and candied ginger

Summer's End

1.5 oz Empress 1908 gin • 0.5 oz peach liqueur • 1 tbsp cardamom syrup • 0.5 oz lemon juice • 1/2 peach, sliced • 1 oz tart cherry juice • 3 drops Scrappy's Cardamom bitters

Rim your glass with sugar. Blend everything but cherry juice and bitters with some ice, strain into glass. Add 3 drops bitters, top with cherry juice.

Toyko Tea


2 cups ice • 3 cups lemon/lime soda • 2 limes, cut into wedges, plus slices for garnish • 1/4 cup melon liqueur (recommended: Midori) • 1/4 cup vodka • 1/4 cup rum • 1/4 cup gin • 1/4 cup Triple Sec

Add to a pitcher or 1 large "fish" bowl, ice, lemon/lime soda, limes, melon liqueur, vodka, rum, gin and Triple Sec. Stir to combine. Pour drink over ice into chilled soda glasses and garnish with a slice of lime.
