Colletti Royale

0.5oz each Lime juice, elderflower liquor, blood orange juice, triple sec • 1.5oz reposado tequila
Shake all with ice, pour into a glass and top with sparkling rosé

Falling Leaves

A perfect cold day beverage, warming brandy with a hint of honey. Definitely a sipping cocktail.

1.5oz dry Riesling • 3/4oz pear brandy • 1/2oz orange curacao • 1/2oz honey syrup • 3 dashes bitters

Add all your ingredients to a mixing glass filled with ice. Stir & strain into a chilled cocktail glass.

For Foxs Sake

4 oz plum sake
• 1 oz green tea simple syrup • 4 dashes plum bitters •
lemon twist

Mimosa, Ginger Tangerine

1 bottle sake or dry brut sparkling wine • 3 tangerines • 1/3c mint • ginger simple syrup (1c sugar, 1c water, 1/2c fresh chopped ginger) • juicy juice tangerine

Muddle mint with some of the sake/wine. In a pitcher, put in the muddled mint, all the sake/wine, 3 thinly sliced tangerines, about 3/4c of the chilled ginger syrup and a box of juicy juice tangerine. Stir and adjust any flavors as desired (more syrup, more tangerine juice, I think I added in some ginger liqueur)

Mimosa, Strawberry Lemonade

2oz Deep Eddy Lemon vodka• 1oz strawberry simple syrup • prosecco
Rim the glass with the sugar from the candied lemon peel, shake vodka and simple syrup with ice in a shaker, pour into glass and top with prosecco. Garnish with a cut strawberry and candied lemon peel

Mimosa, Strawberry Orange

4 cups orange juice • 1 cup frozen unsweetened raspberries • 1 1/2 cups semisweet sparkling wine • 3 orange slices, halved (optional)

Place orange juice and raspberries in a blender; process until smooth. Pour juice mixture into a pitcher; stir in wine. Serve over ice. Garnish with orange slices, if desired.

Ostend Fizz Royale

Though it's tempting to simply pour the spirits directly into the glass and stir, shaking creates a more appealing and less cloying drink.

Ice • 1 oz kirschwasser (cherry brandy)  1 oz creme de cassis • Chilled sparkling wine

Fill a cocktail shaker halfway with ice. Add the kirschwasser and creme de cassis; shake well, then strain into an ice-filled highball or Collins glass. Top with about 3 oz sparkling wine, or as needed.

Pisco Punch

4 lb pineapple chunks • 1 750-ml bottle Pisco • 2 cups simple syrup • 1.5 tsp grated lime peel • 1.5 tsp grated white grapefruit peel

2/3 cup fresh lemon juice • Ice cubes • 12 pineapple leaves (optional)

Place pineapple pieces in large jar. Pour Pisco over. Cover and refrigerate 3 days, shaking occasionally. Divide Simple Syrup between 2 bowls. Mix grated lime peel into 1 bowl and grated grapefruit peel into the other. Cover and refrigerate both syrups overnight. Strain Pisco into pitcher; discard pineapple. Strain both syrups into Pisco. Add lemon juice; stir to blend. Fill 12 small glasses with ice, then add punch. Garnish with pineapple leaves, if desired.

Pomegranate Honey Jack

2oz honey jack • 2oz pomegranate juice• 1oz clove simple syrup • 2oz ginger beer (or ginger ale)

Put all in a shaker with ice. Shake well, double strain into a glass rimmed with raw sugar.

Combine all. Serve over ice.
