Hot Honey
1 1/8 lb of clear honey
3 tbsp of chili flakes
3 green chilis, whole
1 red chili, finely sliced
1 tbsp of hot smoked paprika
1 pinch of salt, to season
Bring to a gentle simmer, then turn off the heat and leave the honey to infuse for 2 minutes
Stir through 1tsp apple cider vinegar, then transfer to a container to cool for 4 hours
Put 6 egg yolks into a container so that they are not touching. Pour the cooled honey over the yolks ensuring they are fully submerged.
Cover and refrigerate for 2-4 days. They're pretty cured at 4 days so 3 may be best.
Serving Day
7 oz cottage cheese
handful of chopped chives
Mix together. Spread over toasted sourdough. Place cured yolks on top and sprinkle with some more honey and chopped chives.
