Lemon Ginger Pound Cake

 


We had a bunch of leftover ginger and lemon from last weekend so I made a couple Lemon Ginger Pound Cakes


200 g flour • 1 tsp baking powder • ¼ tsp ground ginger • ¼ tsp salt

Sift and combine in a bowl

120 ml milk• ½ tsp vanilla extract • 2 tbsp lemon juice

Combine

175 g sugar • 1 tbsp grated lemon zest • 2 tbsp grated peeled ginger (go with your heart on the zest & ginger)

Food process together 

1 stick unsalted butter, room temp • 2 large eggs

Thoroughly mix the butter and lemon/ginger sugar together then add eggs one at a time.


Alternate 1/3 flour, 1/2 milk, 1/3 flour, 1/2 milk, 1/3 flour mixing between each addition. 


Pour into a prepped loaf pan and bake at 320° for 45ish minutes.


When it's cooking, make a syrup of 1/4 c sugar • 1 tbsp lemon juice • 1 tsp water. About 10 min after you remove the cake from the oven, poke a bunch of bikes in it and pour the syrup over the top. Let fully cool before cutting.
