Apricot Glazed Pork Roast

6 servings (3 ounces pork and about 2 tsp sauce)

Ingredients
1 (2- to 2 1/4-pound) rolled, boned pork loin roast
1/2 cup apricot preserves
1 tbsp Dijon mustard
1 tsp dried thyme
Cooking spray

Directions
  1. Preheat oven to 325 F.

  2. Unroll roast; trim fat. Reroll roast; secure at 1" intervals with heavy string.

  3. Combine preserves, mustard, and thyme in a bowl; stir.

  4. Brush 1 tbsp apricot mixture over roast.

  5. Place on a broiler pan coated with cooking spray.

  6. Insert meat thermometer into thickest portion of roast.

  7. Bake for 1 hour and 45 minutes or until meat thermometer registers 160 F (slightly pink), basting once with apricot mixture.

  8. Let stand 15 minutes before slicing.

  9. Bring remaining apricot mixture to a boil; reduce heat, and cook 2 minutes. Serve with roast.
