Crust
1 1/2 cups graham cracker crumbs
1/2 tsp salt
2 tbsp brown sugar, packed
7 tbsp unsalted butter, melted
Brownie
1/3 cup all purpose flour
1/4 tsp salt
1/8 tsp baking soda
1/3 cup Dutch process cocoa
1/2 cup granulated sugar
3 tbsp unsalted butter, melted
1 large egg
1 tsp vanilla
3/4 cup chocolate chips
Marshmallow

Preheat oven to 325 and grease pop-up pan.
Crust
Use a fork to toss together the crumbs, salt, sugar, and melted butter. Put 2 rounded tablespoons of crumbs into each well of the pan, gently tamping them down. Set aside.
Brownies
Whisk together the flour, salt, and baking soda, and set aside. In a large bowl, whisk together the cocoa and sugar, then stir in the melted butter. Mix in the egg and vanilla, then stir in the flour mixture and chocolate chips, mixing just until no white is showing. Scoop about 2 tbsp brownie batter into each well, dividing it evenly and spreading it to cover the crust.
Place pop-up pan on a cookie sheet and bake until the brownie layer is just set, 10 to 15 minutes. Remove from the oven and cool. The recipe can be made ahead to this point. Once cool, wrap the entire pan with plastic wrap and set aside until you're ready to make the marshmallow.
Marshmallow
make according to recipe. Use a greased scoop or spoon to scoop marshmallow onto each square. Let set for at least 2 hours. When ready to serve, pop out of pan (ensuring to remove bottom piece of metal) place on a baking sheet and place under broiler to toast tops.
