Cinnamon Rolls


Dough 
3/4 cup whole milk warmed to 110F (45 sec in microwave)
8 g active yeast
1/4 c granulated sugar
1 whole egg + 1 egg yolk, large and room temp
1/4 cup butter, unsalted sweet cream, melted
1 tsp vanilla
360 g bread flour
3/4 tsp kosher salt


Melt the butter, set aside to col some.


Put the 110F milk in the mixer and sprinkle the yeast on top. Mix gently and let sit for at least 5 min until foamy.


Add egg, egg yolk, butter and sugar. Mix until combined.


Sift in the flour and salt a bit at a time stirring with a wooden spoon to form a dough.

Place dough hook on mixer and mix on med-high for 8 min until a ball forms.

Oil a bowl, turn the dough out into the new bowl, oil the top of the dough lightly, cover with a towel and let rise for at least 1 hour.

Filling
1 cup light brown sugar, firmly packed 
5 tbsp cinnamon
1/2 cup margarine, room temp

Could also do some orange zest or fig preserves

In a small bowl, mix the brown sugar and cinnamon.

Assembly
Once the dough has risen, roll and stretch the dough out on a lightly floured surface into a 15" by 24" rectangle.

Mark off 1" along the 24" edge of the dough, farthest from you. You will not spread any Margarine or Sugar-Cinnamon mixture on this edge so that you can seal the roll.

Spread the softened Margarine over the dough with a rubber spatula and then evenly distribute the Sugar and Cinnamon mixture. Be careful to leave your 1" edge clean.

As a final step, use your rolling pin to lightly roll the Sugar and Cinnamon mixture.

Starting at the near edge of the dough, roll it up tightly toward the 1" clean edge. The clean 1" edge is used to seal the finished roll.

Trim the left and right ends of the roll. The result will be a 24" roll.

Cut the roll into 10 even portions.

Place rolls in a 9x13 baking dish 1" apart. Cover with a lint free cloth and let rise in a warm, draft free place until almost double, approximately 1 hour.

After rising, rolls should be touching each other and the sides of the pan.

After rising, bake at 350 F for 18 min. The resulting rolls should be lightly browned.
